Fresh Fish

Last weekend I went to the beach (surprise) and ordered fresh grilled fish at the beach-side restaurant. It’s nothing fancy – served up on a metal plate and eaten at a plastic table in the sand under dried palm fronds – but it was pretty damn good. I ate grilled sole, one of the  many fish that are plentiful in Liberian waters, along with marlin, barracuda, and mackerel. What I love about eating fish fresh out of the sea is that you barely need to do anything to it – you can just cook it with a bit of oil and salt and it’s still amazing.
